Rumour has it: Breyani is a South African comfort food originating from Cape Malay cuisine with inspiration taken from the Indian version called Biryani. It is a fragrant and flavour-packed rice dish that typically includes spices like turmeric, cardamom, cloves, cumin, bay leaves, garlic and ginger.
Breyani is cooked differently from biryani, using a layering method of cooking the rice and meats together in a pot. While both dishes are based off similar flavours, breyani stands out with its unique spices and South African twist.
Ingredients :
What do you need ?
5-piece chicken pack
50ml vegetable oil
1 clove crushed garlic
2 sliced onions
2 Tbsp curry powder
2 tsp cumin
350ml rice
750ml chicken stock
Salt and pepper to taste
30ml fresh coriander
125ml frozen peas
Instructions:
How is it made?
Sear chicken in a large frying pan with 1 Tbsp oil until golden brown. Add garlic and ½ the onion and sauté until soft. Then add curry powder and cumin and continue to fry. Stir in rice and sauté for 5 minutes, ensuring rice is completely coated in spices and oil. Add the stock and cover with a lid.
Simmer until all the liquid is absorbed and rice is cooked for around 20 minutes. Season to your taste and then stir through the coriander and peas.
Separately fry remaining onion in vegetable oil at medium to low heat until golden brown and crispy, then drain the separate onions on kitchen paper.
To finish, serve biryani topped with crispy onion, and extra coriander.
